A juicy, chillable red. Fresh, fizzy cherry and redcurrant, a little spice, and barely any grip thanks to only a few hours with the skins. No occasion needed: aperitivo, fried dumplings and tigelle, or a board of cured meats.

Made by Vitivinicola Fangareggi in Correggio, just outside Modena. Bottled while it's still fermenting, so it pours a little cloudy. That's the point. Serve cold, 6 to 8°C.

Hand-picked, bunch by bunch, on a family estate in Correggio.
Vitivinicola Fangareggi

Every bottle comes from Vitivinicola Fangareggi, a family estate in Correggio, out in Emilia-Romagna. About 30km from Modena, balsamic vinegar country too. The Lambrusco Salamino is espalier-trained and hand-harvested in mid-September, then spends just a few hours on skins. Ruby red with garnet highlights. It's bottled before fermentation finishes, so it keeps going in the bottle. No filtering, nothing added, nothing taken away. That's why it pours cloudy. Turn the bottle over before you pour.

What it tastes like

Fizzy cherry, redcurrant, a little spice

Fresh, fizzy cherry and redcurrant, a little spice and a savoury edge. Next to no tannin, so it's light on its feet and low on fuss.

The unexpected bit: it's a red that wants the fridge. Serve it cold and keep pouring.
